Ingredients:

For the Beef Filling:

  • 1 pound ground beef
  • 1 packet Taco Bell seasoning mix (or any taco seasoning)
  • 3/4 cup water

  • 2 large flour tortillas
  • 1 cup cooked rice (preferably seasoned with lime and cilantro)
  • 1 cup shredded cheddar cheese
  • 1/2 cup nacho cheese sauce
  • 1/2 cup sour cream
  • 1/2 cup pico de gallo or salsa
  • 1/2 cup refried beans (optional)

Instructions:

Prepare the Beef Filling:

  1. Cook the beef: In a large skillet, cook the ground beef over medium-high heat until fully browned, breaking it up into small pieces as it cooks.
  2. Season the beef: Drain any excess fat, then add the taco seasoning mix and water. Stir well to combine, then reduce the heat to medium and simmer for about 5 minutes, until the mixture thickens.

Assemble the Quesarito:

  1. Warm the tortillas: Heat a large skillet or griddle over medium heat. Warm each tortilla for about 30 seconds on each side until they are pliable but not crispy.
  2. Melt the cheese: Place one tortilla back on the skillet, sprinkle half of the shredded cheddar cheese over the entire surface, then place the second tortilla on top. Cook for about 1-2 minutes until the cheese begins to melt and the bottom tortilla is slightly crispy.
  3. Add fillings: Remove the quesadilla from the skillet and place it on a flat surface. Spread a layer of nacho cheese sauce in the center of the top tortilla, followed by a scoop of seasoned rice, a scoop of ground beef, a dollop of sour cream, pico de gallo or salsa, and refried beans if using.
  4. Roll it up: Fold the sides of the tortilla towards the center, then roll it up tightly from the bottom to the top, ensuring all the fillings are enclosed.

  1. Heat the Quesarito: Place the rolled Quesarito back on the skillet seam-side down. Cook for 2-3 minutes on each side until it is golden brown and crispy.
